BEST Drop Sugar Cookies

The BEST Drop Sugar cookies are always made by Grandma first.   Some of my best childhood memories are grandma making these thick, soft, yet tender crisp on the bottom – sugar cookies.  I have tried recipe after recipe and always come back to this one for ease and taste.

Drop Sugar Cookies – 2 eggs, 2/3 c. sugar, 2/3 c. oil, 2 tsp. real vanilla, Stir with a fork till thick and fluffy.  Add: 2 c. flour, 2 tsp. baking pwd, 1/2 tsp. salt.  Stir well and drop on a greased cookie sheet – 1/4 c. dough for large cookies – Bake 350 for 13 – 15 – cool on rack – Frost and Decorate with candy sprinkles for holidays – picture shown is for Valentines Day Cookies

ButterCream Whipped Frosting – 1/2 c. softened real butter, 2 c. powdered sugar,      1 – 1/2 tsp. real vanilla, dash of salt, 1 – 2 Tbsp. hot milk – Beat butter till fluffy, add other ingredients, beating till whipped and fluffy.   My grandmas favorite way to make this frosting was to add orange or lemon peel to taste and then frost.  (For chocolate butter cream icing add 1/3 c. lightly packed cocoa – excellent on brownies)

Easy Caramel Apple Pie

Do you love apple pie and ice-cream? This recipe is easy and delicious – we used to have apple pie only once in awhile – now we can have it more often because it doesn’t take the time it did before and yet still out of this world delicious.   Sweet Tart flavor – American as Apple Pie

Crust:  2 cups flour, 3/4 tsp. salt, 2 Tbsp. brown sugar, 1/2 cup real butter softened, 1/2 cup lard, 4 Tbsp. ice cold water

Directions: With a pastry blender mix flour, salt, butter, and lard till crumbly, mix the brn. sugar with the water and blend into flour mixture with fork, do not over knead, set aside, Makes 2 pies with one top crust.

Filling:  Fill a 9×13 glass baking dish with 10 cups sliced apples, granny smith, Macintosh, Jonathon’s, or a mixture.   Set aside.  In a medium sauce pan combine 3/4 cup brown sugar, 3/4 cup white sugar, 4 Tbsp. flour, 1 tsp. cinnamon, 1 tsp. nutmeg, mix completely with a whisk, stir in 1 c. water, and 1/4 c. butter, heat to boiling and thickened.    Pour over apples and mix.

Take chunks of dough pieces and pat into your hand – round 1/4 inch thick crumbly cookies, place on top of apple mixture till the top is covered using all the dough,  sprinkle with 2 Tbsp. mixed cinnamon and sugar, bake at 350 for 1 hour.   While baking make caramel sauce, Remove from oven and serve with ice cream and caramel sauce.

Homemade Gourmet Caramel Sauce:  1 cup sugar, 1/4 cup butter, 1/2 c. Karo syrup, 6 oz. canned milk, mix and cook to just under a soft ball, color will be golden brown, or test in ice cold water, it can be molded with your finders to a soft ball.   For an added crunch – stir in 1/2 cup toasted pecan pieces – Remove from heat and add 1/2 tsp. vanilla, serve hot over pie and ice cream

Pilsbury Dough Boy Obituary

The Pillsbury Doughboy died yesterday of a yeast infection and trauma complications from repeated pokes in the belly.   He was 71.

Doughboy was buried in a lightly greased coffin.  Dozens of celebrities turned out to pay their respects, including Mrs. Butterworth, Hungry Jack, the California Raisins, Betty Crocker, the Hostess Twinkies, and Captain Crunch.

The grave site was piled high with flours.  Aunt Jemima delivered the eulogy and lovingly described Doughboy as a man who never knew how much he was kneaded.

Doughboy rose quickly in show business, but his later life was filled with turnovers.  He was considered a very smart cookie, but  wasted much of his dough on half-baked schemes.  Despite being a little flaky at times, he still was a crusty old man and was considered a positive roll model for millions.

Doughboy is survived by his wife Play dough, three children: John Dough, Jane Dough and Dosey Dough, plus they had one in the oven.   He is also survived by his elderly father, Pop Tart.

The funeral was held at 3:50 for about 20 minutes.

Homemade Chewy Caramel Corn

It doesn’t get any better than this rich ooey gooey real caramel corn, my family loves making this easy no-fail recipe.  Homemade caramel candy poured over popcorn.  The smell is irresistible as it is cooking.  You will definitely want to save some caramel for fancy sliced caramel apples.  The best apples to use for caramel apples is Macintosh, Jonathon, Pink Lady or honey crisp – a sweet but tart apple.

Chewy Deluxe Caramel Corn – 2 cups sugar, 1 cube real butter, 1 cup light karo syrup, 1 can evaporated milk, 3 -4 bags butter microwave popcorn, 1-1/2 tsp. real vanilla

Directions: Combine all ingredients (but popcorn and vanilla) in a medium saucepan, bring to a boil turn down to medium heat stirring every few minutes with a wooden spoon.  In the meantime start microwave popcorn – be careful not to burn – make sure all hard popcorn kernels are removed and place popcorn in a large metal or glass bowl.

Use 3 bags when saving caramel for apples – use 4 bags when using all for caramel corn.   Cook to just under a soft ball or check using ice cold water, if caramel forms a soft ball in your fingers after sitting in water its done.  It usually takes 15-20 minutes to cook and has a medium golden caramel color, remove from heat and stir in vanilla.  If you feel you may have gotten it cooked to long you can slowly add a couple of Tbsp. of milk before you coat popcorn.

For Fancy caramel apples – slice and core one apple in thin slices in a bowl, drizzle plenty of caramel over top, top with toasted nuts, toasted coconut, chocolate chips, sprinkles, marshmallows, cherries, what ever you love works great.  So much better than a whole apple that is messy and hard to eat.

For Deluxe Caramel Corn while still hot spread out on a cookie sheet – sprinkle on any desired toppings and dig in.   Makes the BEST homemade hot caramel sauce for Christmas pudding or ice cream.

For chocolate caramel corn add 1/4 cup cocoa – mix with the sugar and cook as directed – makes the BEST Homemade Hot fudge sauce

The Legend of the Candy Cane

candy caneTo many, it looks like - JUST a candy stick for Christmas.

The young girl ask – why it is such special Christmas candy?  This is what she learned.

When turned upside down, it is the letter J, which stands for Jesus, who was born on Christmas Day.

When turned upright, it looks like a shepherd’s staff.   Shepherds in the field, watching over there flocks by night.

Why does the candy cane have stripes? The prophet Isaiah said, ‘’By his stripes we are healed”.   Jesus bled from every pore.  The red reminds us of his suffering and his blood.  But the candy is white as well.  After all we can do to be obedient to his teachings, his blood washes away our sins, making us white and pure as snow.

The candy cane is much more than a treat at Christmas – It tells the story of Christ’s birth, His Mission here on earth, and his ultimate sacrifice for each of us.

Inexpensive Christmas Gift Idea – give a copy of this thought on Christmas paper – with candy canes to your neighbors.

BEST Chili Ever

101_05301 medium yellow onion chopped

½  large green bell pepper chopped

1  – 14 ounce can diced tomatoes with green chilies medium (or Rotel tomatoes)

1 – 14 ounce can diced tomatoes

4 – 8 ounce cans tomato sauce

1 – 14 ounce can ranch style beans

1 – 14 ounce can pinto beans drained

2 – 14 ounce can red beans drained

1  (1 ¼ ounce package McCormick chili seasoning)

2  cups water or more to desired thickness

2 lbs. diet lean ground beef – browned

Directions: Put in crock pot cook on hi 4 hours, low 6-8 hours – Freezes great – I don’t know for sure if this is the original Wendys chili recipe but it sure tastes like it – This is my families best ever chili recipe – perfect for a cold winters day – serve with crackers and grated cheddar

Hamburger Cabbage Soup

2 quarts water

5 chicken bouillon cubes

1 large yellow onion chopped fine

3 large carrots grated or chopped

1/2 head of green cabbage 2 inch strips

1 Tbsp. Beef Rub Seasoning or combine (1-1/2 tsp. sea salt, 1/2 tsp. black pepper, 3/4 tsp. garlic salt or powder, 1/3 tsp. thyme leaves, 1 tsp. basil leaves)

1-1/2  lb. diet lean hamburger plus 1 tsp. sea salt

Directions: In a large fry pan brown hamburger and drain if needed, while cooking hamburger add all other ingredients to a large soup pot, bring to a boil and simmer 15 minutes, stir in hamburger as soon as browned and finish simmering with vegetables.

Cabbage and Potato Soup: add 1 large cubed potato, 2 large carrots, 1 can of corn and juice, 1 extra teaspoon of seasoning, and less cabbage, add potatoes last 6 minutes of boiling time.

BEST Bowtie Mac N Cheese

bow tie pasta12 oz. mini bowtie pasta

1 cup heavy cream

3 – 1/2 c.   2% milk

2 tsp. flour

3/4 tsp. salt

1/2 tsp. black pepper

2 c. grated Sharp Cheddar Cheese

2 c. grated Fontina cheese

3/4 c. Grated mozzarella cheese

3 tsp. Dried parlsey leaves

3/4 c. Three cheese blend (I use Frigo Tub 3 cheese Italian, Parmesan, Asiago, & Romano)

Preheat oven to 450 – Cook noodles in large pot of boiling water till aladente – drain – Toss all other ingredients with pasta – except 3 cheese Italian blend reserving for the top – Place in a 9 x 13 glass baking dish and top with Italian blend.  Bake 20 minutes or more till golden brown.    Let sit 10 minutes before serving.
