Almond Poppy Seed Bread

breadIf You love Almond Poppy Seed  Bread, this is absolutely Divine!

1 – 8oz. Light Cream cheese softened
4 eggs
¾ cup real butter, softened
1 ¾ c. flour
1 ½ c. sugar
1 ½ tsp bkg. Pwd.
1 ½ tsp. vanilla
1 Tbsp. almond extract
1 Tbsp. poppy seeds
¾ c. sliced toasted almonds

Glaze: 1 ½ c. pwd. Sugar, 2 Tbsp. or more water, 1 tsp. almond
Extract, shake of salt, Mix adding more water if necessary, so
It can be drizzled on top of cake.
Directions: Cream the cream cheese, butter, and sugar till light and
Fluffy. Add vanilla, poppy seeds, eggs, and almond extract, beat.
Add combined flour and bkg. Pwd. Beat well. Batter is thick.
Spread in a buttered and floured loaf pan 9×5. Bake at 325 for
1 hour and 20 minutes. Cool 5 minutes before removing from
pan. Cool another 5 minutes and drizzle glaze over top. Top with
toasted almonds. Can be baked in mini pans.
Lemon Poppy Seed Cake substitute lemon extract for almond,
plus 1 tsp. lemon zest
Lemon Blueberry Cake substitute lemon extract for almond plus
1 tsp. lemon zest, minus the poppy seeds, stir in 2c. frozen
blueberries coated with flour

BEST Whipped German Chocolate Cake Recipe

1 German chocolate cake mix
¼ c. oil
2 eggs
1 ¼ c. water
1 sm. Package instant chocolate Jello pudding
Directions: Beat the above ingredients till thick and fluffy, Spread in two, three, or four greased, floured round pans, and bake as directed on the box.  In the meantime start the filling.
Filling:
2/3 c. canned milk
2/3 c. sugar
2 eggs yolks
6 Tbsp. butter
1 tsp. vanilla
2/3 c. toasted pecans small pieces
2/3 c. toasted coconut
1 ½ c. heavy whipping cream
Directions: In a medium saucepan combine milk, sugar, eggs, and butter, bring to a boil, stirring constantly.  Simmer and stir about 10 min. till thick.  Stir in Vanilla, pecans, and coconut.  Let cool completely.  When cake and frosting are cool, whip the cream stiff.   Fold the German chocolate icing into the whipped cream.
To assemble: Place one round cake on a large serving plate and put half the filling on top, place another cake on top and put remainder of filling on top.  Cover and Refrigerate

Easy Best Taco Ole Casserole

shells1 lb. lean hamburger
1 small onion, or green onion chopped
1 can Red kidney beans, drained
1 can of black olives, drained and sliced
1 – 16oz. bottle Taco sauce
1/2 tsp. salt
1 pkg. (12) soft taco corn shells
1 can cream of chicken soup
3/4 cup milk
2 cups grated cheddar cheese
Directions: In a large skillet, brown hamburger, drain any oil if necessary, add chopped onion, sauté till clear, Add beans, olives, taco sauce, and salt. Heat till hot. In a 9×13 baking pan, tear 6 corn shells in pieces placing them evenly on the bottom. Spoon on meat mixture, tear the other 6 shells and arrange on top. Mix can of chicken soup with milk, and spoon on top of shells. Top with cheese. Bake 350 for 30 minutes, till bubbly hot. Serve with Salsa, and sour cream

Creamy Snickers Apple Grape Salad

snickers2 c. heavy whipping cream, 1/3 c. powdered sugar, 1 tsp. vanilla
1  large pkg. instant vanilla Jello pudding, 1 c. milk
3 large granny smith apples, washed, dried, un-peeled, cut in chunks
1  1/2 c. purple grapes cut in half or mandarin oranges drained well
1 bag mini Snickers candy bars, cut in fourths or chopped
Directions: Whip cream till stiff, stir in powdered sugar and vanilla – Mix pudding and milk, stir into whipped cream.  Stir in snickers, grapes, and apples 1 hour before serving.  Refrigerate – apples go soggy if refrigerated overnight

Melt in your Mouth French Bread Recipe

french-breadpreheat oven to 350 degrees

stir together the following and let sit for 20 minutes covered (if using a  bread machine, use dough cycle)

1 cup flour,3 tsp. yeast, 2 tbsp. sugar, 1 cup and 1/4 warm water

add 1/4 cup oil, 1 tsp. and 1/2 salt, 2 cups and 1/4  flour adding more until the dough is slightly sticky, but forming a ball

knead for 10 minutes and form into a long loaf using a rolling motion (use a little flour only if needed, a little sticking is good it helps you form your dough

place on greased pan and slit the top a few times with a knife and let raise double the size (about an hour)

bake for 25 minutes,pull out of oven and brush with butter for soft luscious french bread (if you like crunch, brush with egg white right after forming loaf)

Best ever Chocolate Chip Cookies

choc-chippreheat oven to 375 degrees
1 cup use real butter
1/3 cup cooking oil
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp. vanilla
cream for 10 minutes (time it, this makes an extra good cookie)
mix dry ingredients together
3 cups of flour
1 tsp. baking soda
1 tsp. salt
blend all together until dough starts to pull from the sides of the bowl(add more flour if needed)
stir in 1 pkg. Nestles or Hersheys choc chips
form heaping tsp size balls on ungreased cookie sheets
bake 375 degrees for 10 minutes
do not overbake -let sit on pan for at least 2 min. before placing on wire rack

Best Chicken Salad Sandwich

chicken-saladIf you like Chicken Salad, you will love this one, it is absolutely the BEST EVER!

1 – 8 ¼  oz. Can crushed pineapple un-drained
1 – 8 oz. Light or regular cream cheese
2 c. chopped cooked chicken
2 c. red grapes cut in half
½ c. finely chopped celery
½ c. green onion chopped fine
¼ c. slivered, toasted almonds, add just before serving
¼ tsp. salt and dash of pepper
Directions: Combine cream cheese, pineapple and juice with a fork till blended.  Mix in the rest of ingredients, except almonds.  Chill filling, then fill hollowed out tomatoes, cream puffs or croissants and sprinkle almonds on top of filling, then serve

Supreme Sweet N Sour Sauce

I have never tried a home-made recipe for Sweet and Sour sauce that I loved, so I made this one up.   It tastes just like our local Favorite Chinese Restaurant.  Let me know what you think?

l – 3/4 c. water
l/2 c. cornstarch
dash of salt
1 cup sugar
Bring to a boil, remove from heat and add:
2  – 1/2 Tbsp. catsup or ketchup
2   – Tbsp. pineapple juice
3  – 1/2 Tbsp. white vinegar
l/2 tsp. lemon juice
Directions: Whisk till mixed, and Heat till hot,  Serve with Crispy breaded chicken strips and fried rice

BBQ BEEF

4 ½ – 5 lb cross rib roast or Elk roast
3 tsp. minced garlic fresh or bottled
1 green pepper, chopped
2 large onions, chopped
½ c. celery, chopped
1 bottle of chili sauce – 12 oz.
1/8 tsp. black pepper
1 Tbsp. brown sugar
½ tsp. grated lemon rind or ¼ tsp. lemon powder
½ c. water
4 Tbsp. Worcestershire sauce
4 Tbsp. apple cider vinegar
Dash of Tabasco sauce or more to taste
1 tsp. Paprika
2 tsp. salt
2 Tbsp. prepared yellow mustard
7 drops liquid smoke
Directions: Place roast in large crock pot with combined mixture, spooning over top and sides.  Cover and cook 8 hours or more on low till melt in your mouth tender.  Take meat out and cut in small pieces, return to mixture, serve on Hot French rolls.  Serves 12-15
