Slow Roasted Beef Rub

3 cups sea salt
1 cup black pepper
1-1/4 cups garlic salt or powder
3/4 cup thyme leaves
2 cups basil leaves
Directions: Mix all together in a gallon zip-lock bag and shake.   Use 2/3 cup of mixture for 10-12 lb. chuck roll beef roast. Put seasoned meat in cooking bag and place in fridge overnight. Bake @ 180 for 24 hours.   Wonderful tender melt in your mouth flavor.

Hint: I use 1 Tbsp. of seasoning with 1 lb. any meat roast, turkey, ground meat, (pork, hamburger, elk, chicken)

Store leftover dry mixture in cool dry place, in glass 2 qt. container with lid.  Buy spices in bulk.  Seasoned meat is delicious in spaghetti, casserole or soup recipes.

World Finest Barbecue Pork Recipe

barbecue ribsOur favorite summertime Hawaiian Recipes are absolutely delicious with Pork, Chicken, Beef, or Turkey

4 lbs. of boneless, lean pork ribs, or boneless skinless chicken breasts, turkey breast  or lean beef roast

Directions: Place meat in a large crock, with 3 cups of water, cook on low 8 hours or high 4 hours,  or Brown meat in a heavy dutch oven, add 4 cups water and cook in oven @ 350 for approx. 3 hours or till tender.

Hawaiian Barbecue Sauce: 2 cups crushed pineapple and juice – 2 cups of your favorite barbecue sauce (our favorite is KC Masterpiece Hickory Brown Sugar), plus 1/2 – 1  Tbsp. dry beef rub mix per 1 lb. of meat

When meat is melt in your mouth tender, cut chicken and beef in rib size pieces, drain juice and return to pan, stir in sauce and cook 30 min to 1 hour more.  (Drained juice makes delicious gravy – 1 Tbsp. cornstarch per 1 cup of juice, whisk and cook till thick)

BBQ BEEF

4 ½ – 5 lb cross rib roast or Elk roast
3 tsp. minced garlic fresh or bottled
1 green pepper, chopped
2 large onions, chopped
½ c. celery, chopped
1 bottle of chili sauce – 12 oz.
1/8 tsp. black pepper
1 Tbsp. brown sugar
½ tsp. grated lemon rind or ¼ tsp. lemon powder
½ c. water
4 Tbsp. Worcestershire sauce
4 Tbsp. apple cider vinegar
Dash of Tabasco sauce or more to taste
1 tsp. Paprika
2 tsp. salt
2 Tbsp. prepared yellow mustard
7 drops liquid smoke
Directions: Place roast in large crock pot with combined mixture, spooning over top and sides.  Cover and cook 8 hours or more on low till melt in your mouth tender.  Take meat out and cut in small pieces, return to mixture, serve on Hot French rolls.  Serves 12-15
